Coffee Break....

We enjoy cooking but I also like being frugal. The other night we made lasagna roll ups for dinner using leftover spaghetti sauce, tomato sauce, cottage cheese, and what was left of the mozzarella. A mixture of cottage cheese and Parmesan was spread three-fourths of the way on cooked lasagna noodles and then rolled up and nestled on top of sauce in a baking dish. The aromas were wonderful. I love a rich tomato sauce bubbling and gurgling on top of the stove bursting with flavors of tomato, basil, fennel and other herbs and seasonings. Once we had each roll nestled in sauce, we poured the remaining sauce over the top and sprinkled fresh shredded mozzarella over the top and baked for 40 minutes.

Served with a garden salad and homemade blue cheese dressing and garlic toast was all that was needed. We settled down in front of the TV to watch a favorite show we recorded - and it wasn't even Friday night!

Though we didn't have dessert that night, we could have easily served this Italian style dinner with Tiramisu and Cinnamon Pastry coffee. After buying a sample pack of five of this flavor of Keurig coffee K-Cups, I have to say; it's perfect to serve along with dessert or even on a weekend morning with a coffee cake. The scent of cinnamon and slightly sweet taste are in perfect unison! Don't take my word for it, try it for yourself!
